Who else loves waffles? I recently bought my first waffle maker. Since then I have been trying waffle recipes galore! We have even instituted a breakfast for dinner night every two weeks in our home. There is something special about waffles. It feels like a weekend, brunch time, and a relaxed day, all in one bite. I even play around with savory flavors.

So, you might wonder if waffles can be made healthy? Well, of course! I always alter recipes to make them more nutritious. My favorite substitutes are oat flour and whole wheat flour for all purpose flour, flax “egg” for regular eggs, unsweetened applesauce for oil and butter, dates for sugar, maple syrup or date syrup when a liquid sweetener is called for (and always less than what the recipe says) to name a few substitutions.

So with that, let’s get to our recipes….

Savory Waffles:

1 C Oat Flour*

1 C Almond Flour

1 C Jowar FLour**

2 C Plant Based Milk

1 C Water (may need more depending on consistency of the batter)

1 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Apple Cider Vinegar

1/2 Small Red Onion

1 Tbs Chopped Cilantro

1/2 C Shredded Carrot

1/2 C shredded Zucchini

1 tsp Ground Pepper

1 C Pant Based Milk ( I use home made soy yogurt)

1/4 C hemp seeds

2 Tbs Cilantro

1 tsp Pepper

1/2 tsp Salt

Mix all of the waffle ingredients in a large bowl. The batter will be thick and chunky which is normal. Place batter into your waffle maker and cook per it’s instructions.

*I make my own oat flour by taking plain rolled oats and giving them a quick blend in a high speed blender.

** Jowar is also known as Sorghum in English. It is a gluten free whole grain, sometimes referred to as the “new quinoa”.

“Dessert” Waffles:

1 C Oat Flour

1 C Almond Flour

1/2 C Flax Meal

1 C Plant Based Milk

1/2 C Water (may need more depending on the consistency of the batter)

1 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Apple Cider Vinegar

2 Tbs Unsweetened Raw Cacao Powder

4-5 Medjool Dates soaked in hot water

3-4 Strawberries chopped

Mix all ingredients in a large mixing bowl and place into waffle maker and cook per instructions.

Toppings can be berries, maple syrup, berry compote, nut butter. The options are endless!

A healthy plant based meal does not need to be boring. With some basics in place you can create beautiful, healthy, interesting meals to satisfy even the most picky of eaters.
